I’m crazy. Does the name ring a bell? If the answer is no, we’ll tell you. An entrecula is a cut of beef, also known as “butcher’s brisket”. A small piece that has no appetite that, on the contrary, is super juicy and precious. It comes from the animal’s diaphragm and is very tender.

Precisely because of its tenderness and taste, It’s the part that Karlos Arguiñano uses to prepare his homemade hamburgers. but the chef mix the minced meat with an ingredient you would never imagine: cooked rice! The reason is that the rice makes the burger even juicier.

We saw it on the Antena 3 program Open Kitchen, and although the chef did not give the quantities of the ingredients, we provide them so that you can prepare these delicious hamburgers at home.

In addition, while preparing the meat mixture, Karlos Arguiñano cooks some roasted potatoes with spices that are a real miracle. And we also tell you how they are made.

Entrecula Hamburger with Seasoned Fries by Karlos Arguiñano

for 4 people

Components

  • 500 grams of minced endrekoula
  • 200 grams of boiled rice
  • 1 onion
  • 3 potatoes
  • Mayonnaise
  • Mustard
  • some lettuce leaves
  • 4 slices of cheddar cheese
  • Salt
  • Pepper
  • Oregano
  • Thyme
  • onion powder
  • garlic powder
  • 4 hamburger buns

Step by step

  1. Prepare the potatoes

    Wash them and, without peeling them, cut them in half and each half into 4 pieces. Put them in a large bowl and season with salt and pepper, oregano, thyme, onion powder and garlic powder. Pour olive oil over them, transfer them to the tray and bake them in the oven for 30 minutes at 200º.

  2. Prepare the burger mixture

    Mix the minced meat with the boiled rice, stirring with a fork. Add salt and pepper to taste and reserve.

  3. Prepare the onion

    Clean the onion, cut it into julienne strips and fry it in a pan with a little olive oil, until it becomes very soft.

  4. make the sauce

    Mix the mustard and mayonnaise and spread the buns with this mixture.

  5. cook the burgers

    Have them broiled or broiled, the doneness is up to you (but they’ll always be juicier if you don’t overcook them). Ideally, they should be cooked on the outside but pink on the inside.

  6. Assemble the burgers

    Put a lettuce leaf on each bun, a hamburger and a spoonful of poached onion. Add a slice of cheese, cover the burgers and serve with the seasoned baked potatoes.

Tips to Spice up the Karlos Arguiñano Hamburger:

  • Add some truffle flakes and a fried egg to the burger, it’s delicious.
  • You can also give it an extra flavor with homemade red fruit jam and sunflower or pumpkin seeds.
  • Add a slice or a few flakes of foie gras as a topping for the burger.
