Thanks to its properties it should be essential in our weekly meals. Although it may not seem like it, beets can be very versatile when it comes to cooking, so we’re sharing some ideas for you to enjoy.
Low in calories, rich in fiber, vitamins, minerals, diuretic and antioxidant. are just some of its benefits. Although most people consume it in salads, boiled or in juice form, its preparations go beyond these classics.
1. Beet Guacamole
The weekend or some event between friends arrives and always comes to accompany a drink with a light snack. This preparation can be the perfect topping for toast or nachos.
Ingredients: Beetroot, red or common onion, fresh or powdered curatou, 1 lemon, cream cheese, salt, pepper and sunflower seeds (optional). The quantities will depend on the restaurants, for a personal portion it is enough with 2 large beets and a unit of onion.
Preparation: I boiled the whole beets, as soon as they are ready, I peel them and cut them into pieces. In a blender, put the vegetables together with the chopped onion, curato, lemon juice, two tablespoons of cream cheese and the spices. Process until a homogeneous mixture remains and when serving add the sunflower seeds on top.
2. Brownies
The special taste of the beetroot and the color that stains the rest of the food make it an ideal addition to many sweet preparations.
Ingredients: 300 grams of cooked beetroot, 250 grams of dark confectionery chocolate, 3 eggs, 200 grams of butter, 200 grams of sugar, 70 grams of self-raising flour (the one used for the cookies, one gram of cocoa), 30 grams of salt and a pinch of dry fruits (optional).
Preparation: In a blender process the already cooked beetroot with a little water and then pass it through a strainer to remove all the liquid, it should be like a paste.
I melted the chocolate and butter in a bain-marie, it can also be in the microwave. In another container I beat the eggs and sugar, if it is with an electric mixer better, otherwise we do it by hand until we get a whitish and foamy mixture.
Next is to incorporate the beetroot paste, chocolate butter and beaten eggs together with the sifted flour, cocoa and a pinch of salt. Mix all the ingredients until it becomes a homogeneous mass and finish with the nuts.
I poured the preparation into a baking tray with greaseproof paper and baked it for 25 minutes in an oven at 180°. Once ready, wait for it to heat up and enjoy.
3. Hamburgers without meat
It is probably the favorite of many vegetarians and vegans. If you want to reduce your meat consumption, you must try these burgers.
You will need: 3 cooked beets, 1 cooked carrot, a piece of ginger, spices to taste (cumin, paprika, dried hot pepper, garlic powder or whatever you like), breadcrumbs, 4 tablespoons of olive oil and salt.
Preparation: In a blender or food processor, add the cleaned and chopped vegetables, the piece of ginger, the spices, salt and olive oil. Start the beating and once the mixture is homogenized, add spoonfuls of the breadcrumbs.
The final texture should be a dough that does not stick to your fingers, so it is convenient to pour the breadcrumbs in parts. When it has the right consistency, form the hamburgers and cook them in a pan back and forth.
