Vegan or 100% plant-based burgers have gained notoriety in the last couple of years. You don’t have to be vegan to ask for them, and more and more young people are deciding to have them as another option in their everyday life. Almost two years ago, Renato Lagos Salazar together with Régulo Mauriola Mauriola decided to bet on a business that sold only herbal products. The result was an extensive menu of chicken and meat burgers, desserts that have nothing to envy the traditional ones and milkshakes with vegetable milk that are richer than the classics. Here we tell you his story.
“The general idea was born based on the growth of veganism worldwide, where Renato proposes the idea of creating a plant-based burger.”, recalls Régulo Mauriola Mauriola, chef and head of production at Unreal. The idea became a reality in December 2020, during the pandemic. In previous notes, we have already mentioned that plant foods were developed in Peru during the first months of the pandemic. Unreal was one of those new projects in Lima.
For the creators of Unreal, the plant-based meat proposal has gained popularity in recent years, “is a better alternative for consumers, benefiting the planet by requiring fewer natural resources, in addition to producing fewer gas emissions than regular beef“.
“The success of plant-based meat is such that chains such as Burger King and Mc Donald’s have already included this burger on their menu, internationally.”they add.
“I start to carry out and document the development of the brand through a lot of testing and research in the vegan sector, it took us about five months to launch.” Régulo talks about how much it cost them to have a product with good texture and taste. If there was one thing they wanted, it was for their hamburgers to be different from what was already out there and have a really appetizing texture.
The first burgers they brought out were meat burgers. These are made from pea protein. And a few months ago he launched the chicken guy. “When we started we only had meat burgers, we immediately saw a need from our customers where there was an interest in chicken burgers, which we had to develop a product very similar to conventional chicken.”adds the chef. “The main input is textured soybeans, nutritional yeast and national spices that give the aroma and taste of a real hamburger.“, he adds.
Unreal has good hamburgers that have nothing to envy from traditional ones. To achieve this, Régulo says that it was born from Renato’s creativity and that thanks to his experience in the kitchen and a lot of research and testing, they were able to have these products. Always using only ingredients that are suitable for vegans, from the bread to every ingredient that is placed on the hamburger, the sauces and the desserts.
“We use textured soybeans to get a product that tastes incredible compared to conventional chicken. We apply the technique of moisturizing and marinating with our exclusive blend of plant-based spices for both chicken nuggets and sandwiches“, account.
The burgers you can’t miss are: The Classic, a classic meat burger with lettuce, tomato, pickles and caramelized onions. the Cheese, a meat-style burger topped with melting vegan cheese. the Korean BBQ, both tasty and spicy with a meaty texture. the Sweet Burguer, if you put pineapple on your pizza, this is the burger for you.
As for those with a chicken-like texture, you’ll find: Chicken 1000 Island, Classic Chicken, Spicy Chicken, and Chicken and Pico de Gallo.
Unreal has more than eight sauces to go with the burgers and chicken nuggets. “Like all our recipes, we focus on the nutritional aspect of the vegan sector, seeking to satisfy their tastes by developing traditional sauces. Besides fusing some, getting incredible flavors like honey, mayo, bbq, 1000 island, ranch, alioli, chili mayo among others.”argues Regulo Mauriola Mauriola.
In addition to hamburgers, a few months ago they also released some soy meat nuggets. “On the alternative menu we have the nuggets accompanied by the classic potato sticks or sweet potatoes, in the same way we have crispy breaded onion rings, our plant-based recipes”comment.
As for the desserts, they are currently testing to have more vegan options. They currently have a brownie that is soft on the inside and crunchy on the outside. As well as a chocochip cookie and his delicious milkshakes made with vegan ice cream and veggie drinks.
“Reach for quality and texture if it’s hard to find the ratio and texture that egg gives you in conventional recipes. In vegan recipes it is a bit difficult, but this is achieved through testing and research and, of course, putting our experience into their development.“, he narrates.
Regarding the vegan ice creams, he mentions that they are their own recipes, made with top quality ingredients. The flavors they currently have include strawberry, mango, lemon and mint, peanut, cookies and cream, chocolate, among others.
“The process of achieving an incredibly creamy texture is all about the balance of the ingredients in the recipes and, of course, the knowledge and action of each ingredient. The plus we put in all of this is in complete harmony and dedication to each of our recipes, seeking the satisfaction of our customers.“, explains Unreal’s chef and production manager.
Finally, he explains that what appears on the menu is thanks to consumer demand, thanks to their comments and suggestions. “What we are interested in is the creativity and innovation of creating products that satisfy the restaurant“, ends up.
